Eat This: Fresh Baby Corn

When you visit Thailand, you know to sample the curries, pad thai, and spicy soups. However, please remember to also savor a simple ingredient: fresh baby corn. Supermarkets and outdoor stalls sell baby corn partially husked, so you can see the tiny cob and kernels. Rarely available in the U.S., this delicate vegetable adds a subtle, fresh flavor and crisp texture to stir-fried dishes. The canned variety cannot compare.
